Which is more important total viewers/share or demographics?
Neither or both. For determining how many people are actually watching the show, the total viewers/share is the primary number of concern. For ad revenue which is more important to companies to sell advertising air time, the demographic is more important. Total numbers and share are the primary determination for show renewal, but so are the demographics which indicate how much money the show could make.
