For me, I still have 13 minutes to wish all of you here in the U.S. a Happy Thanksgiving. After that, I should wish you Happy Black Friday. One of my family's traditions for Thanksgiving is to take turns around the table sharing what we feel thankful for this year. We do this in between dinner and dessert. Well, I thought of all of you a lot today and how thankful I am for my 5-0hana. Thank you all for being my friend and support system and my encouragers and my teachers and so much more. Lots of hugs going out to each one of you. Happy Thanksgiving!

Scarla, my family and I do the same thing! This year my grandmother had Thanksgiving and she had these leaf's cut out of construction paper, and they had our names on them, and we had to write what we were thankful for. Then we tied string on them, and hung them from branches they had gotten from outside. It looked really cool, and it made for a creative center piece! My little cousins wrote the most adorable things, one of the 4 year olds, wrote she was thankful for "rainbows & sun" I thought that was cute.

I thought that since it is now the day after Thanksgiving, it would be a nice idea to exchange some turkey leftover recipes on this thread.
I've been making turkey enchiladas on black Friday for 30 years now, so my family would absolutely freak if I did. Then for the past 6 years we've hosted our "Be Creative With Turkey" potluck on Saturday to have a fun time and help all of our friends get rid of their Thanksgiving leftovers.
Flour tortillas or corn, rolled or stacked, red sauce or white.... it's all in personal preference, but here's my way of making Turkey enchiladas....
First thing, get the rice started 1 c. brown rice 1/3 c. wild/black rice 2 & 1/4 c. water (put in glass bowl, cover, microwave 24 minutes)
While the rice is cooking, mix in a very large bowl.... 4 c. chopped turkey 1 can refried beans 1 can black beans, drained & rinsed chopped black olives 1 can chopped tomatoes w/green chilies 8 oz. shredded cheddar cheese
When rice is finished, add while it's still hot, stir. The hot rice will melt the cheese and help hold all the ingredients together.
Spray large pan with Pam, stuff & roll tortillas (I prefer the large burrito size flour ones), line up in a pan, spray tops of enchiladas with Pam before covering with foul, bake 50-ish minutes at 350.
Mix 1 can enchilada sauce & 1 can tomato sauce to have ready to pour over hot enchiladas, then return to oven uncovered for 5 more minutes.

Yes, that's very cute, especially Hawaiian rainbows and sun, huh? I think our families would seriously get along well. I don't know, I have a crazy redneck family. I left out the part about our Thanksgiving when all 5 little kids (ages from 5-2) jumped on my one Uncle and had him on the ground. Or when someone thought it was a good idea to give the kids whipped cream and it ended up on the floor. Oh yeah, and then my uncle tried to tackle my poor grandmother and she ended up on her hands and legs crawling away. Or myself along with my brother and my 2 other cousins that are all around the same age ended up isolated at our own table in our own room away from the crazies. We donned the 4 eldest cousins "The Forgotten 4" because no one cares about us anymore. (JK) haha My family is nuts! But they're fun, and as long as your family can laugh at the ridiculous jokes, and antics that go on, we would have a blast! ;D

Just wanted to wish all of you a marvellous first of Advent. In it's spirit, light a candle and feel the love and warmth that other people brought to your life. Take a step back and breathe deep. Let the stress and anger of the last week behind you and prepare for all the good that is to come next week. Christmas time has begun.

Oooh, azziria, Christmas pudding! I have wanted to have some most of my life. You don't get it here, except just in the last decade or so, there are imports of international food, and several years ago I got a little one - they were expensive - to share with a couple of friends - I even got the brandy sauce - and we could never get together at the same time and they ate it without me. Dammit. (Needless to say, I would never try to make one. We don't know from steamed puddings.)

Margarine, I *love* Christmas pudding, it's my favourite, but I have to admit that I like my own home-made Christmas pudding far better than bought pudding! I have an old recipe that comes out quite light and fruity, and contains black treacle and Guinness. We make enough that we need to mix it up in a bucket because it's too much for the mixing bowl, and we all have a stir (the kids use their hands!) and make a wish as we do so. A funny tale: a few years back a friend in California asked for my Christmas pudding recipe, and so I posted it online for her. A few days later she came back to me perplexed - did I really mean 'mixed spice'? It transpired that what she knew as mixed spice is what we would call curry powder, whereas to me 'mixed spice' is a mix of cinnamon, coriander, dill, fennel, nutmeg, ginger, cloves and turmeric that I use in sweet things like cookies and cakes. Thanks for the recipe, azziria. I have never made Christmas pudding before, but will have to give it a shot. We hosted our annual "Be Creative With Turkey" potluck last night (always the Sat. after Thanksgiving). I made Tamale Pie (w/turkey instead of beef) and Turkey Pot Pie.
